Both lentils and spelled have very ancient origins in our food culture and while on spelled we know that it was the basis of the diet of Latins, Etruscans and Romans; lentils are even mentioned in the Bible, Genesis 25:34, where it is written: “Then Jacob gave Esau bread and lentil soup. He ate and drank …. “. In ancient Rome and in Jewish culture lentils represent the auspicious image of luck and prosperity for the new year. In Rome this tradition originates from the custom of giving a” scarsella ” , or a leather bag, tied to the belt and containing lentils, with the hope that they would become sound coins. The link, therefore between the two elements has its roots in our history, it was called the “Etruscan soup “A soup whose origins are lost in the mists of time, still prepared today, contains some of the typical ingredients of our traditional Mediterranean diet: spelled, lentils and extra virgin olive oil.

Suitable to be eaten as a single dish, accompanied only by a drizzle of extra virgin olive oil. Spelled and lentil recipes are many and rich in imagination. Let’s start with cold salads, ideal in summer, versatile and easy to prepare, to continue with soups and soups present in the peasant culinary traditions of many regions of Italy. It can also accompany both fish and meat, enhancing its taste and giving numerous nutraceutical properties to the dishes.
