Taste
The experience starts with the opening of the bag and explodes as soon as the pasta is placed in the boiling water (be careful not to salt the water too much), at that precise moment a quantity and intensity of intoxicating and memorable scents of: wheat, freshly baked bread, but also flour and homemade pasta. Its taste, very delicate and pleasant, wraps and embraces, without fading, the accompanying sauces. The porosity of the bronze drawing allows him to marry at any seasoning. Its structure, always well defined, allows it to be the main actor of that dish.

Nutraceutical
The high presence of proteins (13.5%), the good presence of fibers (3.4%) and the full-body milling with the wheat germ, allow our pasta to make a contribution of ideal nutraceutical factors for those intends to follow a healthy lifestyle. Cappelli, in fact, gives an excellent supply of: Minerals (such as potassium, iron, magnesium, calcium, selenium, sodium and beta-carotene), but also lipids, essential amino acids and vitamins of group B and E. Slow drying, water naturally mineralized from the source of the Sele and the good presence of fiber allow, then, an excellent feeling of digestibility and lightness.
Palletizing
All our shipments are designed with respect for the environment and in minimizing paper and CO2 emissions in our transport. That’s why we only rely on couriers that allow us to monitor and organize deliveries with the least waste possible. For this reason, we recommend to our customers solutions that allow to complete the cartons and reduce waste.
Packaging
For our pasta we have chosen only quality. PP5 bag to ensure maximum maintenance of the quality and organoleptic characteristics of our pasta. All kept in a GC2 food cardboard box. With the constantly evolving studies we will arrive in the shortest possible time to replace the PP5 plastic film in natural biodegradable film, as soon as we are sure to guarantee the same quality as always. ONLY OUR WHEATFor our pasta line we use only our 100% self-produced Senatore Cappelli organic durum wheat. Cappelli durum wheat is an ancient wheat, indigenous to our territory. The beauty of the large and vitreous grain, the remains of the long, black ears and the high protein content of the semolina make it particularly suitable for pasta production.
TIMETime is our secret ingredient! We await the passing of the seasons for the growth of our plants and patiently the best time for our crops. We use all the time necessary for the very slow drying of our pasta, to offer an otherwise lost taste and aroma.
ANALYSISFor us, transparency is everything, that’s why we make available all our analyzes of soils, seeds and our processed products.
NO CHEMISTRYOn our land we never use substances of chemical origin. No glyphosate. To feed our fields we use only self-produced organic fertilizer from the anaerobic digestion of our agricultural by-products.
SEED SELECTION AND CLEANINGEvery single seed is the result of a responsible choice dependent on two simple factors: territorial tradition and organoleptic sensoriality. Jealous in the conservation of our seeds, we only use self-produced ones. For this purpose we have created a highly technological food system for the cleaning and selection of our beloved seeds.
SOURCE WATERPasta is made from two simple ingredients: semolina and water! We have located our pasta factory next to the Sorgente del Sele to combine the best wheat with the best water.
SUSTAINABILITYOur entire supply chain is energy self-sufficient thanks to our anaerobic digestion system. In this way, by reusing the organic by-products of our transformations, on the one hand we self-produce electrical and thermal energy and on the other we recover natural organic fertilizer, which, returning to the earth, balances the nutrients of the soil and closes a perfect system of Circular Agricultural Economy.
